| In 2005 we produced a series of Thai cooking videos and released them on three DVDs entitled "Learn to Cook Thai with SITCA." In 2010, to commemorate our 11 anniversary and to thank our former students from all over the world, we decided to share them here. Some of the recipes appear in two parts. SITCA director Roongfa Sringam demonstrates. The videos were written and directed by the institute's co-founder Martin Amada, who provides the accompanying explanations. |
The selections below begin with the 2 minute introduction to SITCA that appears on our main page. Then, to learn more about the sources of Thai cooking ingredients, watch our three-part culinary tour. This scenic and fascinating journey - 30 minutes in all - was shot in several provinces on Southern Thailand's mainland. Travel with SITCA director Roongfa Sringam to see how prawns are farm raised. Visit factories where fish sauce, shrimp paste and rice noodles are manufactured. Tour farms and orchards where the vegetables, herbs and fruits used in Thai cooking grow, and at a family run plantation, see a demonstration of how palm sugar is harvested and processed. Written and narrated by Martin Amada. The last two selections are excerpted lessons from SITCA's 57 minute instructional carving DVD, "How to Carve Fruits and Vegetables the Thai Way."
